Harvest is quickly approaching in the vineyards, and this is one of the most exciting times of the year. The fruit is rapidly ripening on the vines and each day brings us closer to our first pick. We are currently in the process of testing the sugar levels, acidity, and monitoring the ripeness of each vineyard block. When deciding when to pick we look at all of the data points and also taste the grapes to see how the flavors are developing. It’s a balancing act of science, experience, and waiting for the right moment when everything lines up and it’s time to harvest. While the grapes continue to ripen, we are in the full swing of harvest preparations. This includes cleaning tanks, pumps, hoses, picking bins, the press, and all other harvest equipment. It always exciting when the vineyard season transitions from the growing season to harvest mode. Every day is unpredictable, and busy, but it’s all worth it when the fermentations start going. We can’t wait to see what this upcoming vintage has in store!
