In our March wine club release we have decided to release the 2023 “Old Vine Syrah.” This Syrah is the first wine that we have bottled under the label denomination of Old Vine. Being that our Syrah was the first Syrah vineyard planted in the Sierra Foothills, and is now over fifty years old, we decided that the Old Vine denomination aptly described our Syrah. Having a vineyard that is over fifty years old is not only unique among California wineries, but having a vineyard of that age that is still producing great quality fruit is rare. Our 2023 Syrah is a great representation of Old Vine Syrah. It is big, bold, with lots of depth, and an almost chewy texture. It has lots of dark fruit notes with and an earthiness that remains through the mid palate and finish. This Syrah is a great representation of both the vineyard and the Varietal. We can’t wait for you to try and enjoy this Syrah!
Recipe to pair with our NEW RELEASE 2023 Old Vine Syrah – Korean Short Ribs
Ingredients (Serves 4):
-3 pounds meaty English short ribs, each rib about 3 inches long
-¼ cup sugar
-¼ cup toasted sesame oil
-½ cup soy sauce
-2 green onions, minced
-4 cloves garlic, minced
-¼ cup sesame seeds, toasted and ground
-2 tablespoons flour
-1 teaspoon red pepper flakes -½ teaspoon ground ginger
Instructions:
- Using a sharp knife, score the meat deeply every half inch, but do not detach the meat from the bones.
- Rub all over and into the cuts with the sugar and sesame oil.
- Place the meat in a large non-aluminum container.
- Let stand for 30 minutes at room temperature.
- In a small bowl, combine the soy sauce, green onions, garlic, sesame seeds, flour, red pepper flakes, and ginger.
- Rub this mixture all over the ribs and into the cuts.
- Let stand at room temperature for 1 additional hour. (Or marinate the ribs for up to 4 hours in the refrigerator, but bring them to room temperature before grilling).
- Preheat the broiler or prepare a charcoal or gas grill.
- Broil or grill the ribs until tender, turning frequently, 4 to 5 minutes per side, or about 20 minutes in all.
